Key Lime Bars (Coconut Flour and Protein)

keylimeproteinbarsThese bars could easily be frozen for up to a month and are best enjoyed right out of the fridge as they will need to stay chilled.

Filling:
1½ cups key lime flavoured Greek yogurt
⅔ cup plain Greek yogurt
2 scoops vanilla whey protein powder (39 g)
½ cup egg whites
⅓ cup lime juice, freshly squeezed
2 tsp. coconut flour

Crust:
½ cup pecan halves
⅓ cup coconut flour
¼ cup vanilla whey protein shake

Preheat an oven to at 325°F (165°C/140°C fan, Gas Mark 3). Lightly grease a 9x13" glass baking dish.

In a food processor, mix the pecan halves and coconut flour until crumbled, then blend in a Premier Protein Vanilla shake.

Add mixture to the prepared baking dish and press crust mixture down flat.

Blend all the pie filling ingredients together until smooth.

Pour the filling over the crust.

Bake in a preheated oven with a water bath for 30 minutes or until the filling is firm.

Set aside to cool. Garnish as desired. Slice and serve.
