Meatloaf (Protein)
This easy meatloaf is juicy, tender and packed with 41g of protein.
Meatloaf:
1 medium onion, diced
½ cup milk
1 egg
½ cup panko breadcrumbs
1 tsp. dried parsley
2 tsp. garlic, grated
2 tsp. Italian seasoning
2.2 lbs ground beef (1 kg)
½ cup (2 scoops) unflavoured whey protein powder (39 g)
sea salt
black pepper, freshly ground
Meatloaf Sauce:
½ cup Protein Tomato Sauce
2 Tbsp. Erythritol Gold
Preheat the oven to 350°F (180°C/160°C fan, Gas Mark 4). Line a baking tray with parchment paper or a silicone mat.
In a small skillet, cook onions in olive oil or butter over medium-low heat until tender.
Combine milk, egg, breadcrumbs, parsley, garlic and Italian seasoning in a jug. Mix thoroughly. Let the mixture sit for 5-10 minutes.
Mix the ground beef, cooked onions and protein powder in a large bowl.
Add the egg mixture to the mince mixture and combine thoroughly. Shape the meatloaf as desired and place on the prepared baking tray. Season with salt and pepper.
Bake for approximately 35 minutes.
Mix the tomato sauce and sweetener.
Remove the meatloaf from the oven, pour the sauce mixture over it and bake for an additional 20 minutes.
Remove from the oven and let sit for 10 minutes before slicing and serving.
