Blueberry Banana Lemon Muffins (Coconut Flour and Protein)
This is another breakfast muffin in my rotation. These muffins are ooey, gooey and chewy thanks to all of the fruit and lemon juice and have the benefit of added protein.
3 small or 2 large bananas
2 scoops vanilla whey protein powder (39 g)
1 tsp. baking powder
⅓ cup coconut flour
1 small container fresh blueberries
½ lemon juice, freshly squeezed
sea salt
ground cinnamon
Preheat an oven to 350°F (180°C/160°C fan, Gas Mark 4).
Mash bananas, add wet ingredients, stir and add dry.
Stir until combined.
Bake for 15-20 minutes.
Made 9 muffins.
