Cottage Cheese Quiche (Crustless with Protein)

cottagecheesequichecrustlessproteinCottage Cheese Quiche is a delicious and simple crustless quiche recipe made by blending eggs with cottage cheese. Add in your favourite toppings and enjoy a high protein breakfast that’s a great variation to traditional quiche.

6 large eggs
¾ cup cottage cheese, I used 2% cottage cheese
½ cup (2 scoops) Premier Whey Protein Powder (39 g)
½ tsp. sea salt
¼ tsp. black pepper
¾ cup cheddar cheese, freshly shredded, divided
½ cup bacon, cooked, crumbled
2 Tbsp. green onion, diced

Preheat an oven to 375°F (190°C/170°C fan, Gas Mark 5). Coat a glass pie plate with nonstick cooking spray, set aside.

In a blender, add eggs, cottage cheese, protein powder, salt and pepper. Blend until there are no chunks left. Pour egg mixture into a bowl and mix in ½ cup shredded cheddar cheese, crumbled cooked bacon and green onion. Pour into the prepared pie dish. Sprinkle with the remaining ¼ cup cheddar cheese.

Bake for 25-28 minutes, or until eggs are cooked through and set in the middle. (Note that the dish will be puffy when baking but will settle when taken out of the oven.) Remove from the oven and let cool for 5 minutes before cutting into slices.

Makes 8 servings.


Cook's Notes:

Make-Ahead: This entire dish can be made and refrigerated in an airtight container. When ready to eat, warm-up in a moderate oven.

Ingredients:

  • Eggs: Use large eggs. You can substitute with egg whites if you like.
  • Cottage Cheese: I always use the 2% low fat cottage cheese but you can use whatever you have on hand. You could even substitute with ricotta cheese.
  • Cheese: I like to use cheddar cheese, but you can use whatever cheese you have on hand, like Parmesan or feta cheese.
  • Bacon: Crumbled bacon is always a good addition to your crustless quiche, but you can use turkey bacon, breakfast sausage or nothing at all.
  • Seasonings: A bit of sea salt and black pepper is all I use but you can add in garlic powder, mustard powder, or whatever seasonings you like.
  • Green Onion: Chopped green onion adds a burst of colour and mild onion flavour.

Variations:
This is such a great recipe to add whatever toppings and leftovers you have on hand. You can quickly turn it into any type of quiche your taste buds like.

  • ​Meats: use crumbled bacon, turkey bacon, cooked breakfast sausage, or leftover ham.
  • Veggies: this is a great recipe for using sautéed onions, roasted red peppers, chopped fresh spinach, broccoli florets, bell peppers, or diced zucchini.
  • Cheese: cheddar cheese, Swiss cheese, Monterey jack, Parmesan cheese, feta cheese, or Gruyère cheese all add a delicious savoury flavour.
