Mashed Sweet Potatoes (Protein)
Mashed sweet potatoes don’t need many ingredients to taste delicious - but when you amp them up with whey protein, coconut milk and butter, they become a naturally sweet and creamy crowd-pleaser.
2 cups sweet potato, peeled and cut into ½" cubes (~1 large sweet potato)
½ cup (2 scoops) Premier Vanilla Whey Protein Powder (39 g)
¼ cup full-fat canned coconut milk (BPA-free)
1 Tbsp. butter
1 tsp. sea salt
1 tsp. black pepper, freshly cracked
In a large pot with a steamer basket and 1 inch of boiling water, steam sweet potatoes for 7 minutes or until cubes are tender and easy to pierce with a knife.
Transfer potato cubes to a medium mixing bowl and mash with a potato masher.
Add remaining ingredients to the bowl and mix well.
Serve warm.
