Blueberry Cobbler (Instant Pot)

instantpot-blueberrycobblerInstant Pot Blueberry Cobbler is an amazing berry crisp dessert that comes together in minutes. It's simple to make and you can use fresh or frozen berries to make this delicious dessert.

Filling:
2 cups frozen blueberries
1 tsp. pure vanilla extract
⅛ cup lemon juice, freshly squeezed
1 cup sugar
1 tsp. cornstarch

Batter:
2 cups all-purpose flour, unbleached
1 Tbsp. baking powder
½ cup sugar
¼ cup butter, melted
1 cup milk

To Serve:
vanilla ice cream

For the Filling:
In a medium-sized bowl, add all the filling ingredients. Fold to combine.

Pour the filling, using a spatula to scrape in all of the sauce to a small round dish that will fit in the Instant Pot.

For the Batter:
In a mixing bowl, add all of your batter ingredients. Mix until smooth. Pour the batter over the filling. Spread it out, in order to get an even layer.

Assembly:
If you don't have a silicone sling, create one by folding tin foil together into a belt. Place a trivet in the Instant Pot.

Place the sling under the dish and cover the dish with additional foil. Lift and lower the dish into the Instant Pot.

Then put your lid on to the sealed position and set to "Manual/High" for 25 minutes. Let it naturally release when it's done.

Pull out using the sling and remove the foil.

Serve hot with vanilla ice cream.

This cobbler can be kept in the fridge for up to 5 days.
