Meatloaf (Beef)
This hearty classic meatloaf with a caramelized glaze will feed the whole family with a simple yet flavourful mealtime favourite. Using staple pantry ingredients you'll be able to quickly put together a satisfing meal that can be made ahead or cooked from frozen.
Meatloaf:
2 lbs ground beef
1 cup breadcrumbs
⅓ cup milk
2 eggs
1 tsp. Italian seasoning
1 medium onion, finely chopped
1 Tbsp. garlic, minced
¼ cup fresh parsley, finely chopped
1 Tbsp. Worcestershire sauce
2 Tbsp. ketchup
1 tsp. sea salt
½ tsp. black pepper, freshly ground
Glaze:
2 Tbsp. ketchup
2 Tbsp. barbecue sauce
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Lightly oil/butter a 9x5" loaf pan (1 lb loaf pan).
Make the Meatloaf:
In a large mixing bowl, combine beef, breadcrumbs, milk, eggs, Italian seasoning, onion, garlic, parsley, Worcestershire sauce, ketchup, salt and pepper. Mix well with your hands until the mixture forms a uniform consistency.
Transfer the beef mixture into the prepared pan and invert it upside down onto a quarter sheet baking pan or 9x13" casserole dish to transfer the meatloaf over.
Bake for 1 hour until the internal temperature reaches 160°F, as read on a meat thermometer.
Make the Glaze:
In a small bowl, whisk to combine ketchup and barbecue sauce. Spread the sauce evenly over the meatloaf. Then, return the meatloaf back into oven and bake for additional 10-15 minutes to create a beautiful caramelized glaze.
Let the meatloaf rest for at least 10 minutes before serving.
Serve with a side of mashed potatoes or roasted vegetables. Drizzle any extra pan juices on top for extra flavour.
