Apple Cider Pound Cake (Utah)

american-utah-sparklingciderpoundcakeThis pound cake is incredible and completely reminds me of fall with every bite. Using sparkling apple cider in the batter and the glaze gives it a delicious and unique flavour. I love everything about it!

¾ cup butter, softened
1½ cups sugar
3 large eggs
1½ cups all-purpose flour, unbleached
¼ tsp. baking powder
¼ tsp. sea salt
½ cup sparkling apple cider

Glaze:
¾ cup confectioners' sugar
3-4 tsp. sparkling apple cider

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Line bottom of a greased 9x5” loaf pan with parchment paper; grease paper.

In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. In another bowl, whisk flour, baking powder and sea salt; add to creamed mixture alternately with cider, beating well after each addition.

Transfer to prepared pan. Bake 40-50 minutes or until a toothpick inserted in center comes out clean.

Cool in pan 10 minutes before removing to a wire rack to cool completely.

In a small bowl, mix glaze ingredients until smooth; spoon over top of cake, allowing it to flow over sides.

Makes 12 servings.
