Corned Beef Hash (Air-Fryer)
This crispy corned beef hash is made in the air fryer from start to finish. It's great if you're looking for something to do with leftover corned beef.
1 lb red potatoes, cubed
½ cup green bell pepper, chopped
½ cup onion, chopped
2 tsp. vegetable oil
½ tsp. ground paprika
sea salt
black pepper, freshly ground
1 cup leftover corned beef, cubed
2 eggs
Preheat an air fryer to 400°F (200°C/180°C fan, Gas Mark 6).
Combine potatoes, bell pepper, and onion in a large bowl. Add vegetable oil, paprika, salt and pepper. Stir until potatoes are evenly coated. Transfer mixture to the air fryer basket.
Cook in the preheated air fryer for 10 minutes. Shake the basket and cook for 5 minutes. Stir in the corned beef and cook for 5 more minutes.
Make two small wells in the mixture. Crack an egg into each well. Cook until eggs are set and cooked to desired doneness, about 3 minutes.
