Corned Beef and Tomatoes (Caribbean)
Corned beef and tomatoes is a quick, simple, tasty and affordable dish made using canned corned beef.
Perfect for a weeknight dinner to satisfy your hungry family.
2 Tbsp. extra-virgin olive oil
1 small onion, chopped
2 ripe plum tomatoes, chopped
4 cloves garlic, minced
2 scallions, chopped
3 sprigs thyme or 1 tsp. thyme leaves
hot pepper sauce, to taste
Open corned beef, remove from the can and cut into small pieces.
Heat oil in a medium pot over high heat.
Add onion, hot pepper and cook for 1 minute until the edges are brown.
Stir in tomatoes, garlic and cook 3 minutes until tender, aromatic and separate from the oil.
Stir in corn beef, breaking up chunks and mix well to combine.
Add chopped scallions, thyme and cook 5 minutes, stirring, until all the flavours meld.
Taste and add black pepper and salt if required.
Makes 4 servings.
