Chili (Moose Native American)
Compliments of the Maliseet tribe.
2 cloves garlic, minced
2 onions, chopped
2 lbs ground moose
2 cups tomato sauce
4 Tbsp. chili powder
1 Tbsp unsweetened cocoa
1 Tbsp apple cider vinegar
1 tsp. cumin
1 tsp. paprika
1 tsp. sea salt
½ tsp. black pepper, freshly ground
½ tsp. all-spice
½ tsp. ground cinnamon
1 tsp. pure honey or molasses
1 (15 oz) can dark red kidney beans
1 (15 oz) can black beans
In 4 cups of water, boil ground meat for 30 minutes. Add remaining ingredients except the beans.
Simmer 3 hours uncovered. Add beans and the last hour of cooking.
Makes 8 servings.
