Brown Sugar Bacon (American South)

brownsugarbaconpauladeenA few ways to make this brown sugar bacon recipe really sing: Use the best bacon available (thick-cut bacon), watch it carefully toward the end of the cook time (sugar burns quickly), and don't try to drain it on paper towels (the paper will stick). Keep it on the sheet-pan rack to cool - that time is essential to avoid sizzling the inside of your mouth.

½ cup brown sugar
1 Tbsp. Dijon mustard
8 thick-cut slices bacon

Preheat an oven to 400°F (200°C/180°C fan, Gas Mark 6). Line a baking sheet with aluminum foil or parchment paper. Place a cooling rack on the lined baking sheet.

In a large plastic zip-top bag, combine brown sugar and mustard. Add bacon and toss to coat.

Put bacon on the prepared rack and roast in the oven for 20 minutes. Let drain for a few minutes on the rack and then serve.

Makes 2-4 servings.
