Watermelon Sorbet
Watermelon is light, cool and refreshing. Sorbet is light, cool, and refreshing. What could be a better way to cool off on a hot day than with this watermelon sorbet recipe. This easy creation makes a fantastic summertime palate cleanser or a light dessert for a tropical-themed meal.
½ cup + 4 cups watermelon, seeded and puréed
½ cup sugar
2 Tbsp. lime juice, freshly squeezed
1 tsp. lime zest, freshly grated
In a small saucepan, bring ½ cup watermelon puree and the sugar to a simmer and remove it from the heat. Add the lime juice and zest and allow the mixture to cool for 20 minutes. Add the 4 cups fresh watermelon purée to the melon-lime mixture, and then freeze in an ice cream maker according to the manufacturer’s instructions.
Makes 8 servings.
