Brown Butter Sauce (Sage)
Butter and sage sauce is wonderful on filled pasta, such as ravioli, but it also enhances every variety of pasta.
6 Tbsp. butter
6-8 leaves fresh sage
sea salt
black pepper, freshly cracked
Put the butter in a small skillet over medium heat. When the butter turns to a light gold colour, add the sage leaves, salt and pepper.
Cook for 15-30 seconds, turning the leaves once.
Pour over cooked pasta.
Makes enough for 1 lb of pasta.
