Garlic Spaghetti

garlicspaghettiCall it spaghetti aglio e olio, call it garlic spaghetti or call it delicious - any of those will be perfectly accurate. Known as aglio e olio in Italian, this simple pasta dish uses fresh herbs, salt and pepper and plenty of oil, garlic and parsley to achieve maximum flavour. The whole dish will come together in the time it takes to cook the spaghetti, so dinner couldn’t be much easier. It can be dressed up and customized in so many ways, too. The authentic recipe calls for oil and garlic only. I've added my favourite herbs and freshly grated Parmesan cheese.

2 Tbsp. sea salt, for pasta water
1 (16 oz) pkg spaghetti
10 cloves garlic, minced
¼ cup extra-virgin olive oil
¼ cup fresh parsley, minced
2 Tbsp. fresh oregano, minced or 2 tsp. dried oregano
1 tsp. sea salt
¼ tsp. black pepper, freshly ground
½ cup Parmesan cheese, freshly grated

Cook spaghetti in a heavily salted pot of water according to package directions.

Meanwhile, in a skillet over low heat, cook garlic in oil until lightly browned. Remove from the heat; stir in parsley, oregano, salt and pepper.

Drain spaghetti; place in a large bowl. Add garlic mixture and Parmesan cheese; toss to coat.

Makes 6 servings.
