Manicotti Crêpes
1 recipe Dinner Crêpes
Filling:
1-quart Ricotta cheese
4 eggs, slightly beaten
½ cup Mozzarella cheese, grated
¼ cup Romano cheese, grated
2 cloves garlic, crushed
¼ cup Italian bread crumbs
½ tsp. sea salt
½ tsp. pepper, freshly cracked
Topping:
4 cup tomato sauce
¾ cup Mozzerella cheese, grated
Preheat oven to 350°F (175°C). Grease large baking pan.
For the Filling: Mix all ingredients together in large bowl. Place spoonful of filling in center of each crêpe and curve edges around filling-form a tube.
For the Assembly: Cover bottom with tomato sauce. Place crêpes in single layer with seam side down on the sauce. Cover each with a spoonful of tomato sauce. Sprinkle with cheese.
Bake for about 30 minutes.
