Wafer Cookie Crust

maplecheesecakeroastedpearsA light and delicious alternative to graham cracker crusts for cheesecakes or pies. Use any flavour wafer cookie that you like.

46 (6 oz) vanilla wafer cookies
3 Tbsp. cane sugar
¼ tsp. coarse sea salt
5 Tbsp. unsalted butter, melted

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4).

In a food processor, pulse cookies until finely ground (you should have about 1½ cups). Add sugar, salt, and butter and pulse until combined.

Firmly press crumb mixture into bottom and up sides of a 9" pie plate. (If using a spring form pan, press crumbs halfway up sides.)

Bake until crust is dry and set, about 12 minutes.

Let cool completely in plate/pan on a wire rack before filling.
