Hot Fudge Pie
This is a great pie for chocolate lovers. It is very rich, easy to make and delicious. Serve hot with vanilla ice cream and a sprinkling of nuts, if desired.
4 oz butter
1½ squares unsweetened baking chocolate (1.5 oz)
1 cup sugar
2 eggs, beaten
1 tsp. pure vanilla extract
¼ cup all-purpose flour, unbleached
2 Tbsp. milk
Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4). Butter an eight” diameter pie plate or cake pan - use a glass or ceramic, if possible.
Melt the butter and chocolate, just until the chocolate is almost entirely melted and then stir. Set aside to cool.
Mix the sugar into the beaten eggs, combine until the sugar is fully incorporated.
Mix in the butter-chocolate mixture until completely blended.
Add vanilla and milk. Stir well.
Fold in flour, mixing just until no white streaks remain - do not overbeat.
Bake for 25 minutes.
