Custard Pie

custardpieThis is my Granny's recipe which she made frequently, always with love. Simple in terms of ingredients and preparation (the first pie she taught me how to make). Yet tastes as though you put more effort into it.

1 unbaked pie shell
3 large eggs
½ cup raw sugar
½ tsp. sea salt
½ tsp. nutmeg, freshly ground
2-2/3 cups milk
1 tsp. pure vanilla extract

Garnish:
nutmeg, freshly ground

Preheat the oven to 350°F (180°C/160°C fan, Gas Mark 4).

In a large mixing bowl, beat the eggs slightly. Add sugar, salt, nutmeg, and milk. Beat well and poor into the unbaked pie shell.

Bake for 35-40 minutes.

Remove from oven and let cool.

Sprinkle the top of pie with freshly ground nutmeg and serve warm or cold.
