Custard Pie (Italian Egg Pie)

italian-nonnaseggpieEgg pie is a dessert that is similar to an egg custard. Today we are going to show you how you can easily make it at home, and hey, it would not hurt if you can try.

Crust:
1½ cup all-purpose flour, unbleached
½ tsp. kosher salt
1 egg yolk
½ Tbsp. pure vanilla extract
2 Tbsp. brown sugar
½ cup butter
3 Tbsp. water, cold

Custard:
4 whole eggs
1¾ cup evaporated milk
1 tsp. pure vanilla extract
1 cup sugar
1 egg white, beaten to a soft peak

Preheat an oven to 340°F (170°C/150°C fan, Gas Mark 3).

Make the Crust:
In a bowl mix all purpose flour, butter, egg yolk, brown sugar,salt, vanilla extract and cold water.

Mix until well combined. Continue mixing until it forms a dough.

Knead until it becomes elastic.

Put in the fridge for 1 hour.

After 1 hour flatten the dough using a rolling pan.

Put the dough in a pie plate.

Trim the excess dough.

Decorate the edges using your fingers.

Prepare the Custard:
Whisk 4 eggs and add sugar gradually. Add evaporated milk gradually. Add vanilla extract. Give it a good mix. Set it aside.

Prepare the Egg Whites:
Whisk egg white and beat with an electric mixer on high speed until a soft peak forms.

Combine the beaten egg white with the custard mixture. Give it a final mix.

Pour the custard mixture into the crust.

Bake it in a preheated oven for 15 minutes then reduce the temp to 320°F (160°C/140°C fan, Gas Mark 2) and bake for another 50 minutes.
