Sam's Pizza Sauce (Pictou County Nova Scotia)
If you are from Pictou County, you already know. If you are not and have never heard of our famous brown sauce (pizza sauce), let me explain. Generations ago, Greek sauce masters took up residence in the humble County of Pictou amongst the many Scottish immigrants. They took it upon themselves to create humble eateries where the townsfolk could enjoy souvlakis, Greek salads and pizza. "Pizza" you say, that's Italian. Perhaps in the rest of the world it is Italian, but in Pictou County, it is Greek. The secret of the sauce stayed hidden for hundreds of years but over time, rumours spread, people met in secret places to exchange information, until finally there was a complete recipe.
2 large cans crushed tomatoes (28 oz)
1 cup all-purpose flour, unbleached
1½ Tbsp. sea salt
3½ Tbsp. black pepper, freshly ground
3 Tbsp. fresh oregano
6 onions, blended well
3-4 green peppers, blended well
1 bunch celery, blended well
1 small can tomato paste
1 cup water
3 Tbsp. extra-virgin olive oil
3 Tbsp. chicken bouillon
Mix together the crushed tomatoes, flour, salt, pepper and oregano in a large soup pot. Add the onions, green peppers, celery, tomato paste, water, olive oil and chicken bouillon. Mix everything well and then simmer on low for about 3 hours.
Let it cool then store it in ziploc bags before freezing it.
