Baked Chicken with Sweet and Spicy Seasoning

Sweet and Spicy Seasoning:
½ Tbsp. ground ginger
½ Tbsp. ground allspice
½ Tbsp. fresh thyme
½ Tbsp. fresh rosemary
1 Tbsp. sea salt
½ tsp. onion powder
½ tsp. black pepper, freshly ground
½ tsp. ground cinnamon
¼ tsp. ground nutmeg
¼ tsp. garlic powder
¼ tsp. ground paprika
1 tsp. ground cayenne
1 ½ Tbsp. brown sugar

Chicken:
1 cup all-purpose flour, unbleached (125 g)
2 eggs, beaten
1 cup panko breadcrumbs (50 g)
2 lb chicken thighs and legs, bone-in, skin-on (910 g)
¼ cup butter, melted (55 g)

Preheat oven to 350°F (180°C/160°C fan, Gas Mark 4).

Combine all seasoning ingredients and mix well. Add 2 Tbsp. of the seasoning mixture to the Panko bread crumbs, set aside. (The extra seasoning can be used and stored for 1-2 years).

Coat the chicken in flour, then egg, and finally seasoned Panko.

Pour melted butter into the bottom of the 9x13" (22x33cm) pan.

Place each coated piece of chicken skin side down in the butter.

Bake for 1 hour (times and temperatures may vary depending on the oven), flipping the chicken over halfway through.
