Celery, Apple and Cucumber Salad with Lime Dressing

celeryapplecucumbersaladlimedressingA simple spring salad made with in season local easy ingredients. I always seem to follow the same pattern week by week with my vegetables. I love to order celery, but it always seem to be my last vegetable left in the fridge at the end of the week. So this week I decided to make celery shine a little and I made this awesome salad. I made plenty and kept the dressing off until I wanted to eat it. Was perfect for lunch, dinner and even another round the next day.

4 large stalks celery
1 green apple
1 red onion
fresh parsley
1 medium cucumber
½ cup lemon or lime juice, freshly squeezed
½ cup avocado oil

Finely dice the celery, first slice length ways in half, then quarters. Then slice into small 1 cm pieces.

Do the same for the cucumber, apple and red onion. The smaller the pieces the better, so take your time to finely dice.

Add all the vegetables to a bowl.

Finely dice parsley and add to the vegetables.

In a jar place lemon/lime juice and oil, shake and pour over salad when ready to eat.

Store in air tight container in the fridge

Makes 2 servings.
