Chicken Salad with Apple and Fennel

½ apple, finely chopped, such as Pink Lady or Gala
½ bulb fennel, finely chopped
½ small shallot, finely chopped
8 oz chicken, poached or roasted, torn into bite-size pieces
2 Tbsp. mayonnaise
1 Tbsp. fresh chives, finely chopped
1 Tbsp. fresh tarragon, finely chopped
2 tsp. lemon zest, finely grated
1 Tbsp. lemon juice, freshly squeezed
sea salt
black pepper, freshly ground

Using a fork, mix apple, fennel, shallot, chicken, mayonnaise, chives, tarragon, lemon zest and 1 Tbsp. lemon juice in a medium bowl until well combined. Season with salt, pepper and more lemon juice, if desired.

Makes 4 servings.
