Potato Salad (Irish)
Nothing says summer in Ireland like an old-fashioned potato salad, the key is to keep it as simple as possible. Irish cookery is never fancy schmancy. Serve chilled with your favourite grilled meats.
1 lb baby potatoes (500 g)
1 Tbsp. butter
½ cup mayonnaise
sea salt
black pepper, freshly ground
Garnish:
1 Tbsp. fresh chives, chopped
Put the potatoes on the boil for 20-25 minutes. Until they fall off the knife when you stab them.
Strain them and cut them into bite-sized pieces if needed. Pour into bowl.
Add butter and stir until melted.
Add mayo, and salt and pepper and stir until potatoes are coated.
Garnish with chives.
Makes 5-6 servings as a side.
