Artichoke Vinaigrette
This artichoke salad dressing recipe is deliciously tangy. It’s made from marinated artichoke hearts that you can pick up at the grocery store, and it only takes about 5 minutes to make a batch!
1 small (6 oz) jar marinated artichoke hearts, drained
½ cup extra-virgin olive oil
1 lemon, freshly squeezed
3 Tbsp. white wine vinegar
½ shallot, chopped
1 clove garlic, minced
½ tsp. Dijon mustard
1 Tbsp. sugar
sea salt
Mix all ingredients together in a blender until smooth. Give it a taste and adjust seasonings as needed.
Store dressing in refrigerator for up to a week.
Makes enough for a few salads (serves at least 6-8 people).
