Cheese On Toast (England)
The choice of cheese is totally up to you. I've used the French combo of Gruyère and Emmental and also Irish Cheddar. I go with what I have on hand. The mayo makes it a bit moister and the mustard gives it some tang. Traditionally, the Brits like pickles with their cheese, I rather cringe at the thought! But, by all means grab a sliced gershin or my preference,1-2 slices of smoked ham or proscuitto layered under the cheese.
2 slices rustic bread
butter
2 handfuls cheese, grated
1 tsp. wholegrain mustard
1 Tbsp. whole egg mayonnaise
Preheat oven to 475°F (245°C/225°C fan, Gas Mark 9).
Generously butter bread and place on a baking tray lined with foil or baking paper.
Bake for 3 minutes or until butter is melted.
Combine cheese, mustard and mayo. Completely cover the bread with the grated cheese.
Bake for another 5 minutes or until the cheese is melted and bubbling with golden brown patches.
Serve hot and gooey.
Makes 2 servings.
