Lemon Hard Sauce
This a nice topping for almost any steamed pudding.
½ cup butter
1 tsp. lemon rind, finely grated
2 Tbsp. lemon juice, freshly squeezed
1 dash sea salt
1 cup sugar
1 egg
Cream butter and salt. Add sugar and cream until fluffy. Add egg and beat rapidly until well blended. Gradually add lemon juice and rind and continue beating.
Add to a saucepan and cook over low-medium heat until thickened.
Makes 6 servings.
