Blackberry Sauce (Irish)
A simple fresh homemade blackberry sauce that's great for pouring over ice cream, pancakes, waffles, and French toast. It also pairs equally well with savoury dishes such as venison.
2 cups fresh blackberries
¼ cup sugar
1½ Tbsp. cornstarch
1½ Tbsp. water
Put the blackberries in a food processor or blender and process for 10-20 seconds, or until puréed. Pass through a mesh sieve to remove the seeds.
Transfer to a small saucepan and cook over medium-low heat for 2 minutes, or until heated through. Add the sugar and cook for 5 minutes, or until the sugar dissolves completely.
In a small bowl, whisk together the cornstarch and water. Stir it into the blackberry mixture and cook for 1-2 minutes, or until thickened.
Serve immediately, or transfer to a small bowl, cover, and refrigerate for up to 24 hours.
Makes about 2 cups.
