Cranberry Sauce
With the only additions being sugar and a bit of lemon zest, the pure flavour of fresh cranberries shines through in this easy recipe. A welcomed addition to your holiday table.
1 (12 oz) pkg fresh cranberries
1 cup sugar, coconut sugar or ΒΌ cup Stevia
1 tsp. lemon or orange zest, freshly grated
1 cup water
In a medium saucepan, bring water and sugar to a boil, stirring until sugar is dissolved. Add cranberries and simmer, stirring occasionally, until berries just pop, 10-12 minutes.
Stir in zest and transfer to a bowl, let cool to room temperature before serving.
Makes 2 cups.
Cook's note: Cranberry sauce may be made 3 days ahead and chilled, covered.
