Maple Cream Sauce
Maple syrup is de rigueur on pancakes and waffles, and it's delicious. But if you are serving brunch for company and want to make a special presentation, cook up a batch of maple cream sauce instead. It has a similar flavour to the genuine article, so those who like their pancakes or waffles traditional won't be put off. But it provides a bit of richness and just enough style to make it worthy of guests. This maple cream sauce also adds just the right sweetness to bread pudding or cheesecake. Just drizzle it on for an unusual dessert.
1 cup pure maple syrup
½ cup heavy cream
2 Tbsp. butter
Combine the maple syrup, cream, and butter in a medium saucepan.
Stir to blend and bring the mixture to a boil.
Reduce the heat to medium-low and continue boiling, occasionally stirring, for 5 minutes.
This mixture can boil quite high, so be sure to watch it carefully and reduce heat or stir as necessary.
Makes 1¼ cups or 8 servings.
