Smoked Kipper Sliders
This kipper recipe uses canned kipper (smoked herring) and a quick yogurt sauce to make Smoked Fish Sliders. These mini sandwiches are ready in 5 minutes and are perfect for summer picnics, barbecues, and camping.
Smoked Fish Sliders:
1 (3 oz) can kippers
4 slider buns
Yogurt Sauce:
½ cup plain full-fat yogurt
1 Tbsp. sriracha or your favourite hot sauce
To Serve:
microgreens or green leafy lettuce
Drain kippers and flake apart fish.
Mix together the yogurt and sriracha. (Add sriracha to taste - use more or less as preferred.)
Note: You will have extra yogurt sauce. Use it for more sliders, or store it in the fridge and add it to eggs, tacos, or sandwiches.
Assemble the sliders by dividing the fish between the buns, and topping with a dollop of yogurt sauce. Add microgreens or lettuce to the sliders if desired.
Serve immediately, or keep chilled until guests serve themselves.
Cook's Notes:
- This recipe is easily multiplied. As written, the recipe uses 1 can of kipper snacks, and makes 3-4 smoked fish sliders or 2 larger sandwiches. Simply multiply the recipe for the amount of guests you're serving.
- Food Safety/Serving Tip: Avoid leaving these sandwiches out for long periods of time in the hot summer heat. If the sandwiches will be sitting out in the heat, try setting them on a serving tray, and then place that tray on top of a tray of ice.
