Salmon Patties (Pan-Fried with Potato)
My kids do not like anything fishy. I snuck these potato salmon cakes by them and they loved them. I serve them as snacks, sandwiches, or as dinner with rice and a veggie on the side. Personally I like to dip them in horseradish and snack away.
1 (14.75 oz) can salmon, drained and flaked
1 medium onion, minced
2 eggs, beaten
¼ cup garlic and herb seasoned breadcrumbs
¼ cup dry potato flakes
1 clove garlic, minced
¼ tsp. celery salt
¼ tsp. dried dill weed
sea salt
black pepper, freshly ground
2 Tbsp. extra-virgin olive oil
Combine salmon, onion, eggs, breadcrumbs, potato flakes, garlic, celery salt, dill, salt and black pepper in a bowl; form into 2” balls then flatten into patties about ½” thick.
Heat olive oil in a medium skillet over medium heat. Cook patties, in batches, until lightly browned, about 5 minutes per side.
