Salmon Patties for One

salmoncakesforoneThese mini salmon cakes for one (or two small eaters) only need salmon, egg, onion and a few staples. Mix it all up, shape into patties and you are ready to go.

1 small onion, diced
1 (6 oz) can salmon, drained and flaked
8 crackers, crushed, or more to taste
1 egg, beaten
1 Tbsp. butter, softened
1 Tbsp. lemon juice, freshly squeezed
1 tsp. black pepper, freshly ground
3 Tbsp. vegetable oil

Mix onion, salmon, crackers, egg, butter, lemon juice and black pepper together in a bowl; form into 4 patties.

Heat oil in a skillet over medium heat; fry patties in hot oil until crispy and golden brown, about 5 minutes per side.

Makes 1 serving.


Cook’s Note:

  • Adjust the number of crackers for personal taste: more crackers equal less salmon taste, fewer mean stronger salmon taste.
  • I use olive oil rather than vegetable oil.
  • Substitute the onion with 1 tsp. onion powder, if desired.
