Blue Marlin with Maple Soy Glaze Marinade
Blue marlin loins are marinated in maple syrup and soy sauce then pan grilled to perfection. A delicious quick and simple meal to prepare.
4 blue marlin loins
½ cup pure maple syrup (125 mL)
2 Tbsp. extra-virgin olive oil (30 mL)
2 Tbsp. soy sauce (30 mL)
Combine maple syrup, oil, and soy sauce in a bowl. Set aside.
Heat a grill pan (or regular skillet) over high heat.
Season fish loins to taste with salt and pepper. Cook 2-3 minutes per side, or according to desired doneness, brushing fish with reserved sauce during cooking.
Side suggestion: Serve fish with grilled asparagus and rice vermicelli sprinkled with chopped green onions.
