Chocolate Cream Soup (Icelandic Kakósúpa)
Kakósúpa translates as “cocoa soup”. Icelanders are a big fan of sweet dishes, particularly those with chocolate and cinnamon. This Icelandic dessert is so delicious, that it is very often served as a main course. A particular favourite amongst kids, it's easy to make and always greatly appreciated.
dark chocolate (400 g)
whole milk (1.5 L)
3 Tbsp. potato starch
3 Tbsp. sugar
water, cold (1 L)
sea salt
To Serve:
milk biscuits
heavy cream
handful toasted oats
Pour the milk and water into a pot on medium-low heat.
In a separate pot, create a double-boiler and slowly melt the dark chocolate.
Stir the melted chocolate with a spoon until it has a creamy and smooth texture.
Slowly pour the melted chocolate into the soup pot with the milk and water, whisking vigorously to keep it from sticking to the bottom.
Add the sugar while whisking the chocolate, but mix the potato starch with some cold water in a container before adding it to the soup to prevent clumping.
Keep whisking the chocolate while roasting the oats on a dry frying pan.
The soup should become nice and thick but not solid like pudding.
Add a pinch or two of salt to bring out the savoury chocolate flavour.
Garnish with a drizzle of heavy cream, toasted oats and serve with milk biscuits and a glass of milk.
