Tomato Soup with Garlic Bread (Soup Maker)

Tomato Soup:
2½ cups tomatoes, cut into ¾" pieces
½ cup onions, chopped
1 clove garlic, peeled
2 cups vegetable broth
¼ cup fresh basil
⅛-¼ tsp. crushed red pepper

Garlic Bread:
1 clove garlic
extra-virgin olive oil
1 French baguette, cut into slices

Garnish:
sea salt
black pepper, freshly ground
crumbled feta or hard cheese, such as Parmesan or cheddar, freshly shredded
croûtons or crostini
freshly chopped herbs
heavy cream, coconut milk, sour cream or crème fraîche

Place all ingredients into the soup maker. Stir ingredients, close the lid, select the 'Puréed Soup' program and then start.

Meanwhile, prepare the garlic bread. Preheat an oven to 400°F (200°C/180°C fan, Gas Mark 6). Cut garlic in two. Drizzle some oil on both sides of the baguette, then rub with garlic. Bake until crisp.

When the soup is ready, open the lid and serve into bowls. Dollup with yogurt, garnish with basil and serve with garlic bread.

Makes 4 servings.


Cook's Notes: Add extra texture and fun variations to this soup. Top with crumbled feta or add pumpkin seeds and a swirl of coconut milk.
