Broccoli Soup with Stilton (Soup Maker)

broccolistiltonsoupsoupmakerThis smooth blended vegetable soup with blue cheese is great for a dinner party starter or a comfortable meal.

2 cups broccoli, cut into small florets
1 cup onions, chopped
3 cups vegetable stock
½ cup celery, cut into ½" pieces
⅛ cup Stilton cheese, crumbled (25 g)
sea salt
black pepper, freshly ground

Garnish:
crumbled Stilton cheese
croûtons
olive oil
crème fraîche

Trim the broccoli and cut into small florets. Place all the ingredients into the soup maker, close the lid and press the Cream Soup Program.

When the soup is ready, open the lid and taste for seasonings and adjust the salt and pepper.

Pour into serving bowls. Top the soup with some crumbled Stilton or croûtons. Drizzle with a little olive oil or crème fraîche.

Makes 3 servings.


Cook's Notes: Add some steamed chopped broccoli florets as a garnish to add some more texture to you soup.
