Vegetable Soup (Soup Maker)

vegetablesoupsoupmakerWhizz up this versatile vegetable soup in a soup maker using your favourite vegetables. Serve with a dollop of crème fraîche and some herbs.

1¼ cup (8 oz) vegetables, such as onions, celery and carrots, chopped (200 g)
2 cups (10 oz) potato, peeled and chopped (300 g)
3 cups (24 oz) vegetable or chicken stock (700 mL)

To Serve:
sea salt
black pepper, freshly ground
crème fraîche
fresh herbs

Place all the ingredients into the Soup Maker. Stir the ingredients, close the lid, select the 'Smooth Soup' or 'Chunky Soup' program and then press start.

When the soup is ready, open the lid, season with salt and pepper. Pour into serving bowls and garnish with a dollop of crème fraîche and some freshly chopped herbs.

Makes 2 servings.
