Summer Broth

summerbrothMushroom stems, pea pods and/or corn kernels may be added to customize this lovely broth.

2 carrots, sliced
2 ribs celery, sliced
2 summer squash, sliced
1 cup green beans
2 large leeks, cleaned and sliced
6 lettuce leaves
10 sprigs parsley
1 bay leaf
7 cups water 

In a large pot, combine all ingredients and bring to a boil. Reduce heat to low and simmer, partially covered for 45 minutes.

Line a colander with cheesecloth, and strain the broth, discard the solids.

Makes 6 cups.
