Roasted Carrots with Garlic and Lemon
This is really the best and easiest way to roast carrots. All you need is 5 minute prep. It is just that quick and easy.
1 lb medium carrots, peeled and halved lengthwise
6 small cloves garlic, skin on
1 Tbsp. extra-virgin olive oil
sea salt
black pepper, freshly cracked
1 lemon, cut into wedges
Heat oven to 425°F (220°C/200°C fan, Gas Mark 7).
Arrange carrots and garlic on a rimmed baking sheet. Drizzle with oil and season with salt and pepper.
Roast, rotating pan once, until caramelized and tender, 30-35 minutes. Squeeze with lemon before serving. Use a knife to spread roasted garlic on carrots.
Makes 4 servings.
