Glazed Carrots with Orange
Glazing carrots with orange juice enhances their natural sweetness.
2 Tbsp. butter
2 lbs baby carrots, trimmed
1½ cups orange juice, freshly squeezed (4-5 oranges)
½ tsp. fresh thyme leaves
sea salt
black pepper, freshly ground
Melt butter in a large sauté pan over medium heat. Add carrots, orange juice and thyme; cook, stirring occasionally, until carrots are tender, about 5 minutes.
Season with salt and pepper. Serve warm.
