Roasted Cauliflower

roastedcauliflowerLike its close cousins broccoli and kale, cauliflower boasts plenty of antioxidant, cancer-fighting, and heart-healthy properties. Plus, it's chock-full of folate - crucial for women of child-bearing age - and luteins, which encourage eye and artery health and supple skin.

1 head cauliflower, cut crosswise into ½" thick slices
2 tsp. extra-virgin olive oil
sea salt
black pepper, freshly cracked

Preheat oven to 450°F (230°C/210°C fan, Gas Mark 8).

Arrange cauliflower slices on a rimmed baking sheet, drizzle with olive oil, and season with salt and pepper.

Roast until golden brown on top, about 15 minutes. Flip and continue cooking until tender, about 10 minutes more.

Serve immediately.
