Kale Chips
There's a lot to love about kale chips: They're low in calories, packed with nutrients and surprisingly tasty. They are a salty, crunchy, tasty snack that also happen to be ridiculously simple to make.
1 bunch kale (curly green or red tend to work best)
2 Tbsp. olive oil
sea salt
black pepper, freshly cracked
Place a baking sheet in the oven and preheat to 375°F.
Thoroughly rinse and dry the kale. Tear out and discard the stems. Rip the leaves into even-size pieces and place in bowl. Pour the olive oil on top and mix with your hands to combine, massaging the kale while doing so in order to reduce the toughness of the leaves (alternatively, put everything in a plastic bag and shake it up). Add salt and pepper to taste.
Remove the baking sheet from the oven and spread the kale in an even layer. Return the sheet to the oven and bake 10-15 minutes, turning over the kale pieces once, halfway through.
