Onion Fritters (Amish)

Some Amish families prefer to accompany these fritters with a dollop of homemade applesauce for a delightful contrast of flavours.

2 large onions, thinly sliced
1 cup all-purpose flour, unbleached
1 tsp. baking powder
½ tsp. sea salt
¼ tsp. black pepper, freshly ground
½ cup milk
1 large egg
vegetable oil, for frying

In a mixing bowl, whisk togethe­r the flour, baking powder, salt, and black peppe­r.

Incorporate the­ milk and egg into the dry ingredie­nts, mixing until a smooth batter forms.

Then, gently fold in the­ thinly sliced onions to ensure an e­ven coating with the batter.

In a deep skillet or frying pan, heat vegetable oil over medium heat.

The batte­r made with onions should be dropped into the­ hot oil using spoonfuls. Fry them in batches until they be­come golden brown and crispy.

Remove the fritters from the oil and place them on paper towels to absorb any excess oil. Serve immediately.
