Fried Scallions In Batter
Delicate onions turn crunchy and sweet when dipped in batter and fried. For this recipe it's best to use thin scallions.
1 cup white wine
1 cup all-purpose flour, unbleached
kosher or sea salt
black pepper, freshly ground
4 bunches scallions, trimmed
vegetable oil
Whisk wine into flour in a bowl until smooth. Season with salt and pepper.
Halve scallions crosswise. Dip into batter, and fry in hot vegetable oil in a skillet over medium heat until crisp, 2-3 minutes. Drain on paper towels, and salt generously.
Makes 4 servings.
