Pea Quenelles
Simple, tasty and glamorous looking pea quenelles. To be honest they are really not much more than a fancy way of serving mushy peas. But if you do not tell anyone, I am sure no one will notice. These make a great side dish for a dinner party or addition to your regular weeknight dinners.
14 oz frozen peas (400 g)
1 Tbsp. fresh mint, chopped
kosher or sea salt
black pepper, freshly ground
Bring water to the boil. Briefly blanch the peas for about 4 minutes.
Drain the peas and place them into a food processor. Add mint, salt, pepper. Process until just smooth.
Take a heaped Tbsp. of peas at a time and using your hands form quenelles.
Serve immediately.
Makes 4 servings.
