Sautéed Zucchini with Walnuts

Sautéed zucchini with walnuts is an easy, healthy way to add a bit of colour and flavour to your French menu. For the best flavour, look for shiny, unblemished zucchini that measure no more than 1¼” in diameter.
1 Tbsp. butter
1 Tbsp. olive oil
2 medium zucchini, cut crosswise into ¼" slices
½ tsp. kosher salt
¼ tsp. black pepper, freshly ground
Garnish:
¼ cup walnuts, chopped
¼ cup Parmesan cheese, grated
Melt the butter and oil in a large skillet set over medium-high heat. Sauté the sliced zucchini in the hot butter and oil for about 5-7 minutes, until it is crisp-tender with a few caramelized, golden brown spots.
Remove from the heat and toss with salt and pepper. Transfer the seasoned zucchini to a serving dish and gently toss it with the Parmesan cheese. Sprinkle the dish with the chopped walnuts and serve hot or warm.
Makes 4 side dish-sized or 6 garnish-sized servings.
