Roasted Cherry Tomatoes
Roasted cherry tomatoes are full of flavour and a quick recipe to make with cherry or grape tomatoes. Simply roast with garlic, fresh herbs and extra-virgin olive oil for a delicious ingredient to add to pasta, salads, or as an appetizer.
1 pt cherry tomatoes, halved
1 Tbsp. extra-virgin olive oil
4 cloves garlic, minced
1 Tbsp. balsamic vinegar
5 springs fresh thyme, leaves only
¼ tsp. sea salt
¼ tsp. black pepper, freshly ground
Preheat oven to 375°F (190°C/170°C fan, Gas Mark 5) and line a baking sheet with parchment paper.
In a medium sized bowl, toss tomatoes with olive oil, garlic, balsamic, thyme and salt and pepper.
Pour onto baking sheet and roast for 30-35 minutes.
