Sweet Potato Fries with Spicy Yogurt
We prepared the tastiest oven-baked sweet potato fries that will be your new fav guilt-free indulgence. With a spicy and creamy harissa and herb yogurt sauce, they are simple to make and even more delicious to eat when paired with a crisp and refreshing beer.
4 medium sweet potatoes, scrubbed and sliced into ¼" thick rounds, (about 2 lbs)
3 Tbsp. extra-virgin olive oil
2 cloves garlic, grated
1 tsp. ground cumin
1 tsp. ground coriander
kosher salt, to taste
black pepper, to taste
1 cup whole Greek yogurt
1 Tbsp. harissa
¼ cup cilantro leaves, finely chopped
Preheat the oven to 450°F (230°C/210°C fan, Gas Mark 8).
In a large bowl, toss sweet potato slices with olive oil, grated garlic, cumin, coriander, salt and pepper until coated. Spread in single layers onto two baking sheet and roast until golden brown all over, turning once, about 25 minutes.
Meanwhile, in a medium bowl, whisk together yogurt, lime juice, harissa, parsley, and cilantro and season with salt and pepper. Serve sweet potatoes with yogurt mixture.
